My favorite is the old school level 60 Ragnaros boss from Vanilla WoW.Why? It was the first raid I ever tried, and I was lucky to be pulled in with a top raiding guild on that realm back then! However Burning Crusade came out shortly after, so my banana shoulders did not last long.. :(
Vaelastrasz the Corrupt in Blackwing Lair. The infinite everything buff made for a fun nuke fight, but the Burning Adrenaline debuff was a good way to check your raid was awake.
My Favorite encounter would have to be heroic Al'akir, not because its fun, far from that, but because it requires near perfect execution and amazing teamwork to kill. Sure the fight can be very RNG and the loot is beyond frustrating what with not only hoping the item you want drops but you have to pray that its the right itemization you want. However, I have never felt so satisfied from killing a boss before and the feeling of accomplishment when I saw that achievement pop up was immense. The only thing that made the moment even better was the Realm First! that came with it.The fight is by far one of the most brutal fights in the game with everyone needing to do their job perfectly, whether that its tanking, healing, or DPSing everyone needs to stay alive or its pretty much a wipe even with a battle rez. Phase one is the easiest part of that fight but you have to be extremely aware of your surroundings to avoid being caught in a tornado, thrown off the platform from a windburst, making sure two people aren't in the same section when lightning comes out, or getting slowed and dieing to the ice path, and when all four abilities line up at the same time in your area....it takes a very skilled player to survive that along with alert healers dodging all those abilities while healing the DPS that need to stay in the lightning. Phase 2 is just as crazy with avoid tornadoes, killing adds, and resetting acid rain stacks before it drains your healers mana and during our learning attempts and our kill we had one very skilled and alert priest, Monmoth, who expertly used leap of faith to pull our raiders out of tornadoes and back to safety. End that with phase 3 where clouds can kill you almost instantly along with a debuff cast on a single raider that can wipe out the raid if he doesn't move out fast enough? This is by far one of the most challenging encounters I have done and by far one of my favorites if not the favorite.
I would have to go with the classic Onyxia encounter. Always had a lot of Nostalgia for that fight and was happy to see it make a comeback in WoTLK. Was sad to see the old girl all beat up in BWD, thought she deserved better than that :(.
Prince in Karazhan is my favorite encounter plain and simple the mechanics were the most fun of the bosses i have encountered
Lich King. Between defile, val'kirs, and the movement required, this is my favorite fight.

My favourite would have to be my first encounter: Taragaman the Hunger in Ragefire chasm. Can still remember how exciting it was killing my first boss.
I myself always liked the Opera Event in Karazhan.I liked it because you could have Red Riding Hood, Wizard of Oz or Romulo and Julianne. It was always fun to have a change now and then in the raid. I remember wiping on Romulo and Julianne because we couldn't get them killed close enough from eachother. This Event is my most fun experience in raiding just because it was fun to do.
My favorite encounter is the Lich king.Because it was a very epic fight encounter for me it was very challenging and it was very hard but at the same time it was fun and exciting.Being a warlock in this fight was also another reason why i loved it, because i was an important piece due to our portal so we never had to follow the group for valks.I love the stage Blizzard made for the lich king the feeling of the platform were it was and the the transitions we had to do were extreme. The epicness they gave to Froustmourn and when we enter its realm, the dialogue back and forth between Terenas, Tirion, and ArthasWhat i love the most is the first time we defeated him our guild was counting the percentage and than he casted Fury of Froustmourne. And every one yelled cheering in vent.I also loved that i cheated and out a soul stone on myself and got a head start dps i also loved every one in vent laughing and saying "ORION YOU !@#$ING CHEATER"Best days of raiding brought me lots of fun.Just the feeling overall of ICC gave the Lich King his right spot for being my favorite encounter.
My favorite encounter of all time has to be hakkar in the original zul gurub it was the first raid i ever went to i died 176 times in that raid spent 8 hours nonstop in the place and finally we reached the blood lord he was at 2% after having dealt with a myriad of bad things from the mechanics of the fight itself to some guild member "accidentaly" pulling a group of adds from somewhere....stil havent figured out where......when my net went down i nearly wept, but i discovered that my cat had yanked the power cord out of the router signed back in just intime to find that i had been voted most useful dps in the raid and was granted the belt of power that the blood god had dropped one of my fondest wow memories to date =)
My favorite encounter ever was back in Burning Crusade, chilling in the Horde Encampment and fighting waves of 'creeps' which lead to, two bosses. Reminds me of the earlier days of Warcraft III but in such a different perspective
My favourite encounter is Illidan Stormrage. Besides the fight mechanics which were kinda cool, it was kinda the first real endboss I encountered. I started playing rather late in TBC and SSC/TK had been pretty nerfed already, so our guild rushed through there. However, on Illidan we were put to a stop and had to finally progress on a boss for real. It took us quite some time and brainstorming and stuff how to make the tactics work with our setup and all that time during progression I've always had the warglaives in my mind, seeing as I play a rogue and was supposed to get them. A few weeks of hard work later we finally got the boss down and it was really just an epic atmosphere in Ventrilo, in-game and in real-lfie with 2 friends present (who were in the same raid). Even though I got the glaives much much later, it was awesome.
I have to say the Lich King (Icecrown Citadel) because of the great feeling it was to finally beat him, even toward the end of Wrath. The whooping and hollering over Vent went on for hours!A close second is Onyxia, I loved it when Blizz brought her back for the anniversary. "Many whelps, handle it!" I don't know if I would want to try it after the Tremor Totem nerf though...
