I'd have to say Halazzi in Zul'Aman.Nothing has ever brought a smile to my face in game more than seeing Ashli run around speed talking and so happy to be free. :)

High Priest Thekal, Zealot Lor'khan and Zealot Zath was probably my favorite encounter. The Tiger boss from the old Zul'Gurub raid. Although the first time I ever did them was BC, there was still a ton of raging at DPS who couldn't follow simple instructions. I went back in Wrath on my Death Knight as a tank, I must've had them res each other a least a dozen times in one particular fight. Our DPS refused to listen to me, despite the fact that I had killed them a half-dozen times prior for a shot at the mount.
The BRD event for the 0.5 tier quest chain, the first encounter in the game with "pvp" style mobs (threatless/tauntless, intelligent healing, crowd control, etc)
There's so many great encounters I've had the chance to see lately... This is a hard choice. Heroic : Cho'gall. Despite the fact that it can be very frustrating at times, it is also a fight that require amazing DPS, amazing tanking, amazing healing and amazing execution. Not many fights require EVERYONE involved to perform to an elite level.
Mine, since I started playing in WotLK, has got to be the new Jin'do encounter. It gives that element of "Hey, wait a minute, we could free Hakkar from here, so why don't we? Besides, he'll be mad enough to kill this guy for us!" Seems like a good bit of thinking on Blizz's part since I personally think a lot of 5 man encounters are mindless slaughterhouses.
It's hard to pick a favorite, but I'll go with running away from the Lich King in Halls of Reflection. It really appeals to the lore buff in me and was such a unique encounter. The first time we ran this encounter, the mood was just great and it got pretty intense as we ran for our lives. It was a lot of fun.
My personal favorite? Pre-update Deadmines. Got to love that boat fight.
My favourite encounter in wow is when your dealing with the Big Bad Wolf in Karazhan!, the opening of the romeo and julia scene is nostalgic! remembers me about the hard times to get Karazhan cleared!

Pick just one? Gosh... I really liked Moroes in Karazhan. It took a fair bit of co-ordination and control and definately provided a challenge when we started raiding it! Not to mention Moroes little amusing comments
Hands down, Lady Vashj.A three phase fight, all three very different. Phase one spread out and don't get hit by to much lightning, and make sure healers are in range. Phase two tons of adds spawning and running to Lady Vashj, and at the same time coordinate the throwing around of the Tainted Cores, kiting of adds etcetc. Phase three, kite the boss while burning her down fast, and without stepping in more and more green stuff.Being part of the tactical team to plan and setup our guilds strategy, was one of the best times in my WoW history. And finally seeing her go down the first time was the pinnacle.
I loved the plagueworks of ICC. The commentary from all three bosses was pretty funny. especially since Putricide was imitating Professor Farnsworth from Futurama. Loved it.
My Favorite Encounter was the Obsidian Sanctum 25 man 3 Drakes up first attempt with pugs no wipes and i rolled a 42 to win the black drake from boss greatest encounter and luckiest win of an EPIC drake
