Myself - I don't need any. Sometimes could use an addon to remind myself to re-Righteous Fury buff tho ^^
So I think it's not necessary to have addons (think that's why there almost is none).
In TBC (dunno if there's an updated one for WotLK) there was an addon called 'Tankadin' - It used to tell you stuff about your defences. Like are you uncrushable etc..
The new version is (unsurprisingly) Tankadin2, though the numbers section still needed some work with the last version I saw.
Reminders for Righteous Fury and Seals expiring, announcements for missed taunts and Avenger's Shield, along with the activation of Divine Protection and Ardent Defender... pretty much win for any Tankadin.
Any bar mod (Dominoes, Bartender) and unit frames mod (Pitbull, xPerl) will be nice for organizing your display the way you like. Omen for threat

Pally Power? I still use it, even though my guild hates it when I and the other 1-2 paladins go into a 10-minute furious debate how to set it up so everybody gets the maximum benefits of improved blessings.

I use Omen, Decursive, Pally Power, Tankadin2, Xperl, and I'm sure I'm missing one or two.
