Overall geography compares Europe (Germany, Ireland, Scotland, England, France, Turkey) with Eastern Kingdoms (Forsaken, Gnomes, Dwarfs, Worgen, Humans, Blood Elves) and the New World (North America, South America, parts of the Far East) with Kalimdor (Orcs, Goblins, Tauren, Trolls, Night Elves, Draenei)
Alliance
Humans = Medieval France:
antiquated architecture, splintered kingdoms, and how powerful of an institution their Church is, cultural descendants to the Greeks/Romans vs. literal descendants to the Titans/Nords
The Eastern Kingdoms portion of the Alliance = Great Britain
Dwarfs = Scotland:
similar in technology, religion to England, deeper roots in pagan and Nordic origins, similar structures to Stonehenge, Wildhammer branch best representatives of rural Scottish culture, architecture, and accents
Gnomes = Ireland:
land of the little people, clockwork technology indicates perhaps a more post-industrial civilization, proximity to Scotland/Dwarves
Night Elf = Japan:
architecture, geography, Teldrassil's likeness to a bonsai, nature and spirit focused Shintoism, xenophobia, clothing
Worgen = Industrialized England:
technology, accents, general we're-small-but-a-force-to-be-reckoned-with kind of attitude, the worgen curse itself goes against their culturally ingrained tendency to be civilized and reserved
Draenei = Russia/Jews:
kind of far fetched with Eastern European accents, space-age technology coupled with a benevolent theocracy headed by a prophet, mass exodus, and suffering genocide
Horde
Orcs = Huns/African Americans:
under the burning legion they were tribal nomads capable waging war against sedentary kingdoms, but trapped in an unfamiliar land, experience slavery, revolt and reestablish themselves by recovering their original culture, cultural crossover with trolls/native Latin Americans
Trolls = Native Latin Americans:
ethnically diverse, variety of climates, accent, architecture, voodoo and blood-rite religious practices
Tauren = Native North Americans:
conglomerate of the various native tribes, architecture, technology, emphasis on nature worship and the hunt
Forsaken = Nazi Germany:
culturally similar to other groups on the continent, fascist with a worshiped dictator, extreme acts against humanity, paradoxically maintaining the desire to fight against a world that rejected them to maintain idependence (post WWI settlements) while being a cog in a killing machine
Blood Elf = Ottoman Empire:
architecture, hookah culture, prevalence of silks, sun worship analogous to Egyptian theology, technology more advance than Medieval Europe is analogous to high elf knowledge of magic before the First War
Goblin = Modern America:
major source of pop culture references (starting zone = Jersey Shore), highly developed technology, commercialized, prevalent consumerism, interests in self-enhancement, capitalistic without environmental concerns, largely non-theistic
Mists of Pandaria
Pandaren = Tibetans:
architecture, accent, martial arts, non-theistic religion of inner tranquility, few in number, small cities, greatest concentrations of people are in temples high up the mountains, enslaved by Mogu/Chinese empire
Mogu = Chinese Empire:
constructed massive palaces, monuments, and the Great Wall, was unified into on empire after many years of fighting between warlords
Mantid = Communist China:
paradoxically a hive mind where all the efforts are towards the benefit of the group while possessing an all controlling dictator, architecture, clothing, military advantage found in huge population to exploit
Yaungol = Mongols:
largely nomadic, attack settlements, nomenclature mo/yau+ngols

Overall, I think you did a pretty good job though as mentioned above we've seen literallly dozens of these types of threads over the years. The one distinction I would draw though is that I think there are some races which essentially draw from preexisting human cultures while with others I think its more like there are similarities that have just developed without them really being patterned after any particular race or culture. Such as with the undead, I don't think Bliz really set out to pattern them after Nazi Germany or with Night Elves I don't think Bliz really had Japanese culture in mind while making them. I think they are more just traditional elves which are aligned to the moon and then had their own history drawn up around wow lore.

Plus I'd say with the Night Elves, particularly their love of Kimichi, would give them more a Korean influence.

I'd say there's definitely an Asian influence for the elves (their architecture especially), but I can't pin down a country.

That just made my day! I live in Ireland. Dear OP, please come and visit. You will find that most of the country runs on kerosene and peat. The universally accepted standard of high technology is a tractor, and a car that works. Don't expect broadband, taxis, buses, petrol after 9pm or cash machines outside of the four cities.
