There's no difference in terms of gameplay, if that's what you are referring to. The only differences is that they may have different time zones and where the servers are hosted from. If you pick a region that you live in (or a server that's closer to where you live), you should have lower latency.

No difference in latency between Oceanic servers or US servers... Oceanic servers are hosted in the USA; won't make any difference when it comes to lag.
The problem is the time difference. Most Americans/players will be sleeping while you're online...

So what's the difference in realm areas?
I live in Australia, but I chose the USA realms instead of oceanic because I want to play in Illidan.
Is there anything I'm missing out on?
Give up on the "I want to play on a server because of it's name" thing. You need to pick a server that is in your time zone. You will eventually get to the endgame and you are going to want to be doing the end game content and that means you need other players. You really want to pick a server that is in your time zone. It is better to start the raid at 8pm, then 1am, assuming you have a job you have to be awake for.
After time zone, you really want to be on an active server. That means be on a server that has a high population for your faction. Trust me, this may seem counter intutive, because less people may seem like it will increase your access to content, but it doesn't. You will want a vibrant economy and people to raid/group with.
I was on Scarlett Crusade, not becuase I was a role player but I figured it would mean more mature players. And it did. But it was also low population for Horde, and it was not in my time zone. So nothing moved on the Auction House, and there were very few guild options. I did get into a couple of guilds, but they started raiding at 10pm my time. I have to be up at 415 to get ready for work, so basically I soloed all the time when I was on SC.

Ever considered the fact that he wants to play on Illidan because his friends are on that server or something? Why would you assume that he wants to play on that server because of the name anyway?
