Let me start off with saying that I am not too familiar with Engineering. But I can give you my take on Tailoring vs Enchanting, to help you choose between the two.
Stat-wise, every (non gathering) profession is more or less equivalent:
Tailoring
provides a gain of approximately 320 Intellect through
Lightweave Embroidery
. You also get a cheaper leg enchant.
Enchanting
provides a gain of exactly 320 Intellect through
Enchant Ring - Greater Intellect
.
To make money, enchanting is definitely very rewarding if you are a dedicated AH trader. Tailoring is lucrative at times, right now the new crafted PvP gear is a nice money maker, but that will dwindle down a bit over time. It is definitely less time intensive than enchanting to make money off, even when using TSM or similar addons.
Leveling wise, tailoring is definitely the smoother of the two. You can easily farm the cloth for leveling. For enchanting a possibility is to use an addon to identify disenchantable gear (TSM does this for you as well) that is cheaper than its components. It will cost you some money in any case.

I strongly suggest dropping engineering and go with tailoring/enchanting, especially if you are going with a single character. Neither of these two crafts has a separate gathering skill and you can DE all of the tailoring skill-ups in order to level your enchanting.
Now don't get me wrong there is nothing wrong with engineering but imo a cloth class will not get the best use out of some its best special items such as rocket boots. YMMV.
