Play the class you both want to play, since all but rogues work well with others; Rogues have the stealth issue thing.

I don't see why rogues wouldn't pair with a hunter. Sure, the hunter can't stealth to skip mobs with the rogue but they can just kill their way through like normal classes.

I would say to level something that could tank and heal, DK & pally sounds like a good combo. It will make instance ques go faster and its a lot less stressful as a leveling tank when you know the healer.

For the purpose of questing, you don't need to worry about tank/heal for pair-up - any class can easily solo questing at every level, and hunters do better than most - two hunters makes it trivial.
You'll find, though, that DPS classes tend to have longish queue times for dungeons. If you want to do a lot of dungeons, having someone play a tank class (druid, paladin, warrior, monk) would be ideal. However, if you just want to do the occasional dungeon while questing, then DPS classes are fine - queue for dungeon, go quest; you'll have just the right mixture of enjoyable questing with a break of a dungeon here and there, and you won't get sick of the dungeons either as you level.
My opinion: Play what classes you really way; the rest will be fine.
Thats true...it's how I leveled to 90, leveling and then queing while I quested. However, if they are doing RaF, its way more beneficial to just have the insta ques. I leveled a monk with a friend with a priest using RaF...we played maybe 2 hours for 10 days, whenever he had time to play. And poof, level 80 in no time. I actually don't remember leveling that much. As a tank/heal combo with RaF, each time you get an instance you level so fast that you really don't have to go back there again. You do the instance quests, and pretty much you are done for 2-3 levels.
The only drawback to using RaF is being constantly under geared; when you level that fast you out pace any of the gear you own. If you have other accounts, I would recommend you craft lots of armor in different leveling increments. This could also help determine which classes you want to play, the kind of armor you can craft for them.

Hunter + Hunter would work well, but you'd be competing for dungeon loots....
Another factor is that if your 2 pets kill a mob and you haven't shot it, you don't get the tag :P
Very frustrating on the odd occasion it happens.
