any that would make it alot better for me to be one rather than the other?

looks, for most part
humans have mace and swords, dwarves have stoneskin and draenei have HoT, all have their own benefits

I picked human because of rep gains and the whole lore thing tied in with 'em. Although if I were to go for looks for a Pally, it would definitely be a Dwarf. Who doesn't love Irish(or Scottish...kinda hard for me to tell) accents and booze?

I chose a human pally cause it was simply the only thing I liked at the time. I didn't like dwarf pallies that much, and I still don't. Too hairy lol :P But now that the new races have been thrown at us, I can't help but wish that I rolled a draenei pally instead. Bigger-looking, funny jokes, built-in aura/HoT, and a bit more mana...pretty much perfect for PvE. Plus they hold 2-handers like Conan! :)

Don't forget that because everyone can see your buffs, rogues know when you have perception. So they know to stay away.

I think the racial traits for humans are better for being a paladin than the dwarven traits, but that is a matter for debate.
Humans:
-Diplomacy: +10% rep, which becomes more important the longer you play? Yes, I'd like to have my epic dragon mount 10% faster, please!
-Human racial traits favor two weapons that paladins use a lot.
-Perception is useful in BGs and world PvP, even if the rogues can see if you have it on.
-Human Spirit? Yeah, whatever.
Dwarves:
-Stoneform is awesome. Definitely worth having in PvE, even more in PvP.
-Frost Resistance: Take it or leave it.
-Find Treasure: Handy in some PvE situations, useless in PvP.
-Gun Specialization: +1% chance to crit with a weapon our class can't use. Thanks for nothing, Blizz!
Basically, Humans get 3 traits that are always useful, and one that is pointless. Dwarves get 1.5: Stoneform; Frost resistance and find treasure combined equals .5 useful traits. I think Blizzard threw in Dwarf Paladins at the last minute because it only made slightly more sense than Night Elf or Gnome paladins. Dwarves should get two weapons traits like humans do. In their case, Guns and Axes, so at least one will be useful.
I didn't mention Draenei, but the look of a Draenei on a paladin mount is just wrong.

Well, notice how no two races have the same racial traits. (Orcs have axe specialization, Dwarves have guns, Humans have maces and swords, Trolls have bows, etc)

I went human. Dwarf stone skin is great! for priest.... The only one a pally worries about is slow poison, and that's not very scary with BoF. Perception FTW in arena. I love searching out stealthed toons and hittin em with my holy pally. Especially if it's a druid. =) On top of that if you're ret, you can search em out, and own the them before they get to stunlock you. Major bonus in 2v2 against stealthed toons. I prefer human for pally, dwarf for priest since they are already squishy to begin with. But that's for PVP...
Human fem pally FTW! You can always strip and dance with a horde and they usually won't attack you. =)

True..But look at a picture of a Dwarf from any fantasy/roleplaying universe, and what do you see? A short guy carrying an axe.
Granted, the human weapons specializations are basically useless for casters, but we're talking paladins here.

On a side note about the Dwarf racial Stoneform. It also increases armor by 10% for it's duration as well. Can be very handy when tanking groups of fast hitting melee mobs. Shame that Dwarves are just so damn ugly!

Yes, the racial isn't really important. Both help. It's up to you how you want to play it. I prefer a first strike in your face approach. As does the ret pally/rogue group we ran into last night.... They burned my dps way too fast! LOL! I loved it, other then the points loss... Exactly how I want to play mine, but I don't have a ret set yet. Pally rush while burning the dps(unless it's plate of course) and CC the healer to contemplate his life. =) CC tactics FTW! So fast it was rather confusing and my poor hunter didn't last thru my GCD to get out of cc and a heal cast. Even the next round when I knew it was them and they just kicked our butt again... I think he needs more resil. =( I'm going to have to track them down and see what their rating is. They were kicking some serious butt.
I still stick by my claim tho. I believe that a pally should be human. The racial benefit for weapon as well as perception is massive when you play an in your face style. Stone form is more defensive.
