One way to farm low level dusts and essences is by disenchanting low level quest rewards. If that's not an option for you, AoE farming instances is another effective way. Bosses may drop rare items, but the trash will drop the uncommon items you are seeking.

Does anyone know of some particularly good dungeons/solutions for gathering up the mats I require to power enchanting to 525? I have a nice backlog of greens/blues from cata sitting in the bank but I'd like some tips on how to get to the point where they'd be useful.

Want level is your enchanting Skill? This will effect which dungeons to use. Also if you have a alt with tailoring that will help also.
Your also going to want to use different dungeons.
I would do Deadmines>Stocks or SFK (if Horde)>Scarlet Monastary>Scholomance>ZF> and one of the Blackrocks. Your going to have to run them serveral times to get a good supply of mats.
But generally I would go for dungeons that have humaniod (sp) mobs so that you can get the cloth also.

Knowing what your enchanting is at would help quite a bit.
Also, the amount of greens will shift from one run to the next. I was farming BC mats about a week ago, one ramps run got 1/2 a stack of dust, next run, 4 stacks and a stack of essence.
Quick solo farming tip:
Get a guild member who is out farming, questing, etc, and party up. You will still get the pop up window to auto-D/E even with you being the only person in the instance. If said guild member solo's another instance, you can make a ton of mats quickly.

Keep in mind that using the DE Roll feature will not give you the extra materials from Bountiful Bags guild perk.

If you have a friend that is a tailor then You might consider farming a ton to get frost weave cloth and send it to them.so that they can make items that can be disenchanted.

The best way to power level enchanting, if there aren't cheap mats on the AH (and lets face it, for BC/wrath stuff, there ain't) is to get on /trade and ask if anyone else is trying to level BS/LW/tailoring around your level and make a deal to buy all the useless greens they're making.
This is assuming you can actually use /trade for
trading
on your server ofc ...

Late reply, but sometimes you can actually find really cheap greens on the AH that you can DE for mats. If you use this approach, it's important to figure out roughly how much an item is worth in mats once DE'd and then only buy items that cost less than that figure.

Having access to a Minier/Jc makes Wrath Level Enchanting pretty easy to level threw.
Have the Saronite or Cobalt Prospected into gems. And make rings/necks with the gems and Eternals. The Eternal Earth and Eternal Earth/Shadow rings give the highest yeild for mats.
You could also farm Cobalt and have the Cobalt 1H Axe crafted as it disenchants into Geater Essences.
