I can't help but notice that there aren't any Epic gems in the Wowhead datamines yet, except for the Jewelcrafter-speciality gems that is. Anyone know about why there aren't any around? Or was this intended because I can't remember reading about that.

Yeah they might be pulling a "Wrath" again, releasing the epic gems later
And yeah, forgot to mention that they did this in TBC as well.

I have to admit I wasn't around at the launch of Wrath of the Lich King so I wouldn't know.
Can someone confirm this?

In wrath I think it wasn't untill ulduar or was in TOC that epic gems was released. Also If I am not mistaken it was the same in BC with was it BT and Hyjal releasing epic gems.

Yep epic gems didnt come out till ulduar which was when we were allowed to break titanium ore for dust and gems
Actually, prospecting Titanium Ore for gems came far after, in ToC.
In fact, the only way to obtain Epic Gems in the Ulduar tier was through Stormjewels, extremely rare gems occasionally received from Fishing dailies.

If I remember right, I believe the Dragon's Eye gems were epic. Unless those aren't being counted due to the JC only nature.
I don't particularly count those because they were Unique (3) and yes, they were JC-exclusive.

You couldn't reliably gem full epic until ToC, that's why Dragon's Eyes are disregarded. There may be unique epic gear, but there are other epic alternatives for your second ring, trinket, or one-hander.
